Healthy ideas for potluck?

My mom and I are in charge of food for my nephew's bday party this weekend and I can't think of healthy stuff to take that is easy to make and transport. We'll have picnic tables and coolers so nothing too fancy/hard to serve. So far our idea is broiled chicken legs, and mom was thinking about picking up potato and macaroni salad. I'm guessing I'll just take a green salad for myself, but if we could come up with something better for the whole group that would be good!
Also, I have another event to go to the following week that I need to take a side dish to. That one will be in a home so I will have access to heat sources and refrigeration if necessary.
Any idea appreciated!

Vegetables (celery, carrots, radishes, cherry tomatoes, cauliflower...) and healthy dips
Pasta salad with tomatoes, rucola, pine nuts maybe mozzarella and cured ham bits (you can take them away in your plate)
Tomatoes/avocado/onions/black beans salad (with cilantro and spices)0 -
vegetable and dip skewers. You cut and blanch them and put them on bamboo skewers with a bowl of dip to go with them, the veggies are cold when serving. Fruit platters are nice or skewers depends how many you are serving as platters are easier for a large group. Fried rice, boiled eggs cut in half (you can sprinkle them with a tiny bit of curry)....lemme think more on it and get back to you with more ideas
To keep hot/cold you take from your home and wrap the dish/container in a couple of towels or you can get the boxes they use to transport broccoli and use one of those to keep warm/cold longer. Make sure it is either very chilled or very hot before leaving the house.0 -
baked asparagus
1/4 cup olive oil per bundle
! clove garlic per bundle
preheat iven to 400. in a saucepan, heat oil to medium heat, and add minced garlic cloves....heat for about 3 minutes just to get the garlic oil infused. Snap ends off asparagus and place in a 9x13 inch pan. Pour oil over asparagus and cover with foil, put in oven for about 7-15 mins(depending on how thick the asparagus is). When asparagus is done, lightly salt and pepper, then plate on a platter, add parmesean chese on top. Done, and its delicious. At EVERY potluck people ask me to make this0 -

Use the chicken you were already going to make, cut it into bite size pieces, and mix it with a bunch of veggies. Asparagus, Bell Peppers, Tomatoes, etc. Drizzle a little lemon juice or light italian dressing on it, and you're good!0

Crab Salad Spread
Ingredients:
1/3 cup non fat mayo
3 Tablespoons minced onion
1 Teaspoon lemon juice
dash of salt
dash of pepper
8 oz cooked crab, flacked or finely chopped shrimp
1/2 cup celery
Directions:
In a medium size bowl, mix mayo, lemon juice, salt/pepper until blended. Stir in crab or shrim and celery.
Can be used to stuff tomatoes, artichokes, celery, sweet peppers or hard boiled egg whites.
Fantastic Fruit Salad
Ingredients:
2 peaches cut up
1 cup blueberries
1 cup mealon balls
3 plums, cut up
1 cup sliced strawberries
1 cup seedless grapes
6 apricots, cut up
2 red apples cut up
3 bananas cut up
Add: Fruit Salad Dressing
Ingredients:
1 cup fat free plain yogurt
3 Tablespoons orange juice
1 orange, peeled (seedless)
Mix dressing in blender until creamy, Add to fruit in bowl or serve on the side..0 -
barefoot contessa has a lovely recipie for confetti corn, which i'm sure could be made slightly lighter by reducing the ammount of butter used, can be served hot or cold0
