Create a new healthy recipe this weekend- mine is red snappe

OK, does anyone have any suggestions for fresh red snapper fillets. I usually just dust with flour and do a pan sear. Would like something different. Any thoughts?

    Skip the flour and do it en papillote (roughly translates to "in a pocket")!

    Preheat your oven to 325ºF. Season both sides of the fish. I like a little salt, pepper, smoked paprika, cayenne, chili powder and garlic powder. Get a rectangle of aluminum foil, spray one side briefly with non-stick cooking spray. Lay a citrus slice or two (lemon, lime, orange, whatever) on the bottom, put the fish on top of that, cover with another slice or two of citrus. Add any fresh or thawed-from-frozen veggies you want to the foil. Fold up like a pocket. Turn the edges in a few times to really seal in the steam.

    Bake for about 12 minutes. Let it steam in the packet for an additional minute or two before opening and turning out onto your plate. Super easy and yummy!

    I usually do the same thing, only without the flour, just seasonings. Snapper makes pretty good fish tacos too.

    My summer favorite right now (holds up well in blackouts!)
    #1
    1/2 c cooked Trader Joe Harvest Grain Blend
    1/4 c shelled edemame
    1/2 c spinach, chopped
    squeeze of lime and orange juice, add a little grated rind if you have a grater for fruit rind

    #2 Alteration of someone elses "alfredo sauce"
    Cook one small/medium head of cauliflower in 1c water till mushy
    put into blender with salt/pepper to taste and 3-4 Weight watcher or Laughing cow cheese wedges to taste. I love Blue Cheese and the Parmesan Peppercorn.... or the Chipolte/Jalapeno. Add more water to desired consistency. Add fake crab or cooked roasted veggies for more flavor.
