Guiltless Italian Barley Lentil Soup

Make sure you buy your lentils at a place with good turnover so they haven't been sitting on the shelf for years. I love this soup, it's so quick and easy, very filling, and low in calories. Chop the veggies and combine everything in the crock pot the night before so that you don't have to do any prep in the morning.

Serves: 12


1 cup lentils
1/3 cup hulled barley (you can also use pearl barley but it tends to get a little mushy)
1 cup carrot (chopped)
1 cup celery (chopped)
1 cup onion (chopped)
4 garlic cloves (minced)
2 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
2 bay leaves
3 1/2 cups broth
2 1/2 cups water
1/2 tsp fennel seed
1/2 tsp fresh ground sea salt
1 tsp fresh ground black pepper
14 1/4 ounces Italian-style tomatoes, undrained
2 tablespoons cider vinegar

Combine everything except vinegar in crock pot. Cook on low 12 hours. Just before serving, remove bay leaves and stir in vinegar. Do not forget the vinegar--it is a major contributor to flavor!
