spaghetti squash

Any tips on using one to make mac and cheese? How do you prepare one to get the "noodles" out.. lol Any help would be greatly appreciated!!

    I cut them in half and bake them until they are tender to get the "noodles" out...little olive oil and salt and pepper.

    I cut it open, clean it out, brush on olive oil and bake for about 45 minutes. I let it sit for a few minutes and use a fork to 'spin' them out. I haven't tried mac'n'cheese with it, but it is awesome with a tomato sauce filled with other veggies.

    Just cut it in half and nuke it in the microwave until the middle is soft.... then scoop out the "noodles"

    I've never tried it in mac and cheese. I just saute some garlic and toss it with sea salt and fresh ground pepper. It makes and excellent, low calorie side dish. I just cut it in half, scrape out the seeds and then place it cut side down in a glass dish with about an inch or so of water. Then you can either bake it in a 400 degree oven for 30-40 minutes or put in the microwave for approximately 10 minutes (I cook it in the microwave in 3-4 minute intervals after the first 5 minutes). It get mushy if you overcook it.

    Half the squash, clean out the seeds, cut side of halfs face doown on a baking sheet that's been lightly sprayed with a non-stick spray, bake at 350 degrees for about 40-45 minutes. It's done when the squash is soft to the touch on the shell side. The skin or shell is hard and after it cools you take a fork and pull ot the squash flesh. comes out stringy looking like spaghetti, hense the name. Lots of ways to use and prepare it. never tired mac and cheese though.
  • I can not for the life of my remember the name of it, but Rachael Ray made a mac n chz dish with a spaghetti squash on her show one day and it looked incredible! I forgot all about it until I saw this thread. I am positive the recipe is on her site, I will go look for it!!

    They are really hard to cut. I would try to poke a few holes in it and microwave for a couple of minutes to soften it to make it easier to cut lengthwise. Scoop the seeds out and spray a pan and put them cut side down to bake. Then bake the squash until it is soft. Then I just use a large metal spoon to scoop the squash out. I like to make a side dish with mine.

    diced tomatoes
    feta cheese
    slice olives
    diced onions
    chopped garlic
    salt /pepper

    Saute the chopped onion and garlic. Put the squash in a big bowl. Add the onion and garlic. Add the rest of the ingredients and mix together. You can add whatever seasonings your family likes. I put Mrs. Dash and a little garlic salt too.

    Use any of the above techniques to get the "noodles" out... then just make your cheese sauce and mix it together.. or put it on the plate and pour the cheese sauce over and let everyone mix their own.... I have done that with alfredo sauce and it works great

    you said the magic word.. "FETA" I no longer want mac and cheese.. I want THIS.. LOL thank you soo much for sharing!!! I'm a huge fan of anything GREEK!!

    this does sound good to me also I have never tried spaghetti squash before. might be getting one soon. Thanks for the idea.
