Kelly's Chicken A La King
Serves 6
Ingredients:
• 2 cups cooked chicken or turkey
• ¼ cup chopped onion
• 1/2 cups each of red and green peppers, chopped
• 4 to 6 oz fresh chopped mushrooms
• Cooking oil spray
• ¼ teaspoon black pepper
• 4 Tablespoons cornstarch
• 1 cup almond milk
• ½ cup half-and-half, fat free
• 1¼ cups chicken stock, homemade low sodium
Preparation:
1) Heat the oil cooking oil spray and sauté the onion for 2-3 minutes. Add the peppers and mushrooms, and cook until softening. Add black pepper.
2) Mix the cornstarch with the almond milk, set aside for a minute.
3) Add half-and-half and the chicken stock to the vegetables. Bring to a simmer and cook for 3-4 minutes.
4) Add chicken/turkey. Add the cornstarch and almond milk mixture (may have to stir again before adding) and stir until thickened and heated through.
Serving Suggestions: Serve over "Cauli-Rice," low-carb toast or Miracle Noodles.
