What base ingredients are you using? There's a recipe builder here where you can add your ingredients and figure out the nutritional information of a dish.

we have very different dishes and they contain plenty of ingredients vegetables and fruits but they are from the farm markets so they don't have labels nor nutrition information ... and so many other things

Definitely use the recipe builder. I cook from scratch a lot too and you can just put int he ingredients, the # of servings and save it so that it's there foryou if it is a recipe you eat a lot. It's also an eye opener. I have used it to check the calorie and fat impact of reducing oil or sugar, etc. in a recipe and have noticed that cutting the sugar or fat by 1/4th or a 1/2 can really change the caloric value, but the dish still tastes good. I like the tool; give it a try!

If you go online and look up the ingredient you may be able to find some caloric values and then add them to the database.
