Grilled Zucchini Salsa
Options

1 lg sweet onion cut into wedges
2 poblano peppers, 1" pieces
2 med. zucchini (or yellow squash), 1" pieces
2 jalapeno peppers halved and seeded
2 T olive oil
-Combine in large bowl and stir to cover with the oil. Transfer to grill wok or basket. Grill over med. heat approx. 15-20 min's until partly charred and semi-tender. Remove from grill, let cool, then chop and return to bowl. Stir in the below ingredients:
4 Roma Tomatoes chopped
2 T lime juice
1 T hot sauce
1 T sweet vinegar ( I used rice vinegar)
***makes approx. 3 cups

I topped a chicken burger with this. It will be good with egg beaters as an omelet or in sandwich wraps !
