Crock Pot Garlic Lime Chicken - Per Serving Calories: 259.2
Ingredients
4 chicken breasts (i use frozen)
juice from 2 limes
2 garlic cloves, minced
1 1/2 cups low sodium chicken broth
2 tablespoons light margarine spread
1 cup uncooked instant rice
1/2 tsp. black pepper
1/2 tbsp dried thyme if desired
Directions
Place chicken breasts in crock pot
Squeeze juice from 2 limes (approx 1/4 cup) and drizzle over chicken
Mince the garlic and add to crock pot
Pour chicken broth in
Add butter, black pepper, and if desired, 1/2 tbsp dried thyme
Cover and cook on low heat 8-10 hours
Add rice and cook additional 15 minutes
Serve chicken over rice. A side salad complements well!

If I were to cook the rice separately or not at all would you remove ALL of the broth? I believe some liquid is required for crocks, so perhaps 1/4 cup of water?0
