"French Toast"

I don't know about y'all, but I'm a big fan of weekend brunch! I've started making "french toast" that's actually pretty good for you, and it satisfies my craving for a big Saturday morning breakfast.

(Makes 4 slices)
3/4 cup egg whites
1/4 cup unsweetened almond milk
4 slices of high fiber, low calorie bread (I use Nature's Own Double Fiber Wheat)
1 tsp vanilla extract
1/2 tbs agave nectar (or honey)
Plus, I like to throw in some cinnamon and nutmeg.

Just mix together the egg whites, almond milk, vanilla, and sweetener... then dunk in each slice of bread. Each slice ends up being right around 85-90 calories. It's more like eggy than a lot of french toast, but it's pretty protein-packed.

Also, you might have to adjust according to what type of bread you use. The Nature's Own absorbs a lot of egg, so you might need less of the mixture for other breads.
