How do you like 'em? I make mine with cod fillets - seasoned with S&P, cayenne, paprika, and lime. Toss 'er on the grill and cook 'er up. I use small flour tortillas, pre-shredded cabbage, that white goat-cheese-like cheese that's in the mexican cheese section, and greek yogurt. Oh, and lots of Sriacha. Not because it's a mexican condiment, but because it's really good on fish tacos. Also - avocado: Do you make it in to guac or do you just use slices? I'm a slices-only kinda gal.

    Mahi Mahi Fish Tacos

    Ingredients

    4 (8-ounce) mahi mahi fillets
    2 tablespoons canola oil
    Salt and freshly ground black pepper
    Citrus Vinaigrette, recipe follows
    8 (6-inch) flour tortillas, cut into 2 1/2 to 3-inch circles, and deep fried
    Red Cabbage Slaw, recipe follows
    Tomato and Avocado Salsa, recipe follows
    Pineapple hot sauce, store bought or recipe follows, for drizzling

    Directions

    Preheat grill.

    Brush fillets with oil and season with salt and pepper. Grill for 3 to 4 minutes per side.

    Remove from grill and drizzle with some of the Citrus Vinaigrette. Let rest 5 minutes and then flake with a fork.

    Fill each fried tortilla with some of the mahi, top with the Red Cabbage Slaw, Tomato and Avocado Salsa, and drizzle with Charred Pineapple-habanero Hot Sauce.

    Citrus Vinaigrette:

    3/4 cup orange juice
    1/4 cup lime juice
    1 cup fresh basil leaves, chopped
    1 cup fresh cilantro leaves
    1 teaspoon kosher salt
    1/4 teaspoon freshly ground black pepper
    1 heaping tablespoon honey
    1/2 cup canola oil

    Combine all ingredients in a blender and blend for 1 minute.

    Red Cabbage Slaw:

    1/4 cup rice vinegar
    1 tablespoon sugar
    2 tablespoons canola oil
    1/4 head red cabbage, finely shredded
    1 large carrot, cut into fine julienne
    1/4 cup chopped cilantro leaves
    Salt and pepper

    Combine all ingredients in a bowl. Season with salt and pepper, to taste.

    Tomato and Avocado Salsa:

    4 plum tomatoes, chopped
    2 ripe Hass avocados, peeled, pitted and diced
    1/2 small red onion, finely chopped
    1 serrano chile, finely diced
    1 to 2 limes, juiced
    2 tablespoons canola oil
    1 to 2 teaspoons honey
    3 tablespoons chopped cilantro leaves
    Salt and freshly ground black pepper

    Gently combine all ingredients in a bowl. Season with salt and pepper, to taste.

    Charred Pineapple-Habanero Hot Sauce:

    1 ripe pineapple, preferably Golden pineapple
    2 tablespoons canola oil
    1 large Spanish onion, coarsely chopped
    1 container frozen pineapple puree, thawed
    2 habanero chiles, chopped
    1 cup rice wine vinegar
    Salt and pepper
    Honey

    I prefer Ono or Tilapia for fish, marinated in lime, salt and olive oil. I use corn tortillas, shredded cabbage, fresh diced tomatoes and Greek yogurt slightly thinned with lime juice. I haven't used avocado, but if I did it would be sliced or diced. Served with a side of whole pinto beans.

    I love fish tacos! I grew up in SD and I still miss street tacos in Baja, but I will take any fish taco you throw my way. Your version sounds fab! They've got to have cabbage and some sort of white/lime sauce on or I don't consider it an official fish taco, just saying.

    edit to correct my typo and add: & I love to put extra lime on them along with cilantro. Cilantro just makes the flavor explode / the lime!

    I like mine with Cod or Flounder marinated in lime juice and crushed garlic then steamed, white corn tortillas, shredded purple cabbage, a cilantro lime yogurt and a little bit of very fresh mango salsa

    Tilapia - grilled with olive oil, lemons (sliced and juice), onions (slice), fresh garlic (slice), adobo, salt and pepper.

    whole wheat tortillas (fresh)

    purple cabbage

    guacamole

    sprinkle of sharp cheddar cheese

    have to have rice and refried black beans on the side

    I put lemon or lime in it plus a sprinkle of cayenne. . so good.

    Oh my...soooo love em!! My fave on white corn tortillas, white codfish, with sliced avocadoes, diced tomatoes, diced green onions, shredded cabbage, and home made salsa and a slice of lime to squeeze the juice on top!! Yum!!!:love:
  • Tiplapia pan fried using olive oil. (Usually I will mix up what spices I put on the fish). Guacamole and salsa, shredded lettuce and diced tomato. No cheese (lactose intolerant, but I do eat some cheese here and there, but I hear ya on the goat cheese). All on a corn round that has been pan fried with no oil (just to heat it up). YUM

    mmmmmmmmm 9am and HUNGRY!!!!

    I have a little aversion to cooked fish, I'll eat it raw no problems but I do mine like this.

    Soft corn tortilla

    Mashed avocado with chopped garlic, eschallotts, fine chopped tomato and a drop of sweet chilli sauce, S&P ( i think you guys call this gaucamole??)

    Juice of one lime, spanish paprika, chillip powder, S&P, cummin powder, corriander powder and olive oil, swish that around and put in to marinate for at least 1/2 hr with some large prawns

    Home made coleslaw, I make it with chopped cabbage, carrots, beetroots, broccoli and make the mayo with sour cream, S&P, lime juice and a bit of olive oil to make it all come together.

    Fry the prawns on a hot iron pan or on a grill with just a bit of olive oil youwant the prawns to be a bit crispy...

    Put it all together and top with jalapenos!

    I used to take Gortons grilled fillets, break them up and put them in a soft tortilla.
    I have to wait till I can raise my sodium levels beciase tortillas have 500mg of sodium each.
