I have been doing weight training every other day. Even when waiting a day between to rest my muscles are still a little sore which doesn't bother me. Is it enough rest for my body going every other day? I usually do it Mon wed and fri.

I lift harder and feel better with a two day break in training muscle groups. Minimum is one day, what does the Monday workout feel like with that two day break?
If you want, try to concentrate on body groups alternating days, that is maybe upper body on Monday and Friday, then lower body Wednesday. Alternate weeks so the next week is two days of lower, etc.
On the other hand I know people who train 5 days a week using the alternating method, so it is a personal thing..0
