I made this tonight, and it was so tasty that I thought I would share the recipe with others. I made up the recipe myself, based on various recipes that I've seen over time.
3 tsp extra virgin olive oil
2 large garlic cloves, minced
1 onion, chopped
1 red pepper, diced
2 carrots, shredded
1 can of diced tomatoes
1 Tbsp concentrated chicken broth (optional)
1 or 2 Tbsp balsamic vinegar (optional)
2 Tbsp dried mixed Italian herbs (or to taste)
Hot pepper flakes (optional)
2 Tbsp tomato paste (optional)
1 can of beans, rinsed well (e.g. romano beans, navy beans, fava beans, etc.)
3 Italian sausages (hot or mild), pan-fried without oil, and cut into slices
1/2 cup (uncooked) small pasta (e.g. tubetti, macaroni, etc.)
Saute the garlic and onions on medium heat for ~2 minutes. Add red pepper and shredded carrot; cook for ~3 minutes. Add the can of diced tomatoes, plus a can of water (or more, to taste). Add chicken broth, vinegar, Italian herbs, tomato paste (if using), beans, and cooked sausage. Stir and simmer on medium-low heat for ~30 minutes. Cook pasta in a separate pot as per package instructions.
Mix cooked pasta into each bowl just before serving. (Avoid storing leftovers and pasta together, since pasta will soak up all the liquid.) Makes about 4 servings.
The ingredients I used came up to a total of 507 calories per serving.
