Yummy Breakfast

This is a delicious and filling breakfast dish, it needs to be made the night before and this recipe serves 2 people, depending on how much fruit you use it comes out at just under 300 cals.


Swiss Bircher

90 g porridge oats
113g low fat natural yogurt (I use alpro soya yoghurt)
113 ml) skimmed milk (I use alpro unsweetened milk)
1 banana
1 apple, peeled, cored and chopped
Blueberries/strawberries/any other fruit you like

Mix the oats, yogurt and milk in a large bowl. Mash the banana, slice the strawberries or crush the blueberries slightly with a fork. Mix everything together, cover and leave in the fridge overnight, I sometimes add a dash or two of water. Overnight the oats absorb the fuids and swell so you can add water to make it the consistency you like. Its blooming lovely - enjoy!

    This does look nice. I've never soaked oats over night - I tend to just stove top them in the morning. May have a go. :-)

    I make a slight variation on this:

    I soak oats and dried fruit (raisins, sultanas) overnight in fruit juice - orange or apple is nice, cranberry makes it a lovely pink colour.

    In the morning, grate a whole apple into it - seeds, core, everything.

    Add a blob of natural yoghurt, sprinkle with some seeds or nuts, stir in a little honey if it's not sweet enough
