I would love some new crockpot recipes! Anyone have any good ones to share?

  • My friend just turned me onto a cookbook called "Make it fast, cook it slow." She raves about it. Trying my first recipe of chili verde today...

These are two websites that would probably give you lots of ideas. Crockpot Girls and Skinny Crock Pot, both are on facebook and have their own websites. :)
  • Try the website crockpot365.blogspot.com - that's the blog by the author of Make it Fast, Cook it Slow.
  • Fix it and forget it lightly is a good book to check out :)

I found this website today. A lady used her crockpot everyday for a year and didn't make the same thing twice!

I also love to throw chicken breasts (raw or frozen) with about 1/2 cup of chicken broth and a packet of lipton onion soup mix (sometimes only 1/2 a packet if I'm watching my sodium). Cook for 4-6 hours and enjoy. Its very moist and delicious!

Found the Crock Pot girls page on Facebook but can't see any recipes on there. In fact, it looks like an empty page. Any clues?

I don't know if someone already posted this website but ...

The Santa Fe Chicken was really good! But I'm born and raised in New Mexico, so I feel the need to spice it up a bit with some local green chile :)

    Chicken Chili

24 oz. boneless, skinless chicken breasts
16 oz. salsa (I used Harry & David Black Bean and Corn Salsa)
15 oz. pinto beans, drained (black beans would be good, too)
15 oz. whole kernel corn, drained
    2 1/2 tsp. garlic powder
    1 1/2 tsp. ground cumin
    1 1/2 tsp. chili powder
    1 tsp. parsley flakes
    1-1 1/2 C. hot water
    Salt and pepper, optional
1/2 tsp. hot pepper sauce, optional

Place the chicken breasts, trimmed of all fat, in a 4-5 quart crockpot. Add remaining ingredients except water, salt, pepper and hot pepper sauce, combining gently. Cover and cook 6-8 hours on low, or 4 hours on high. Remove chicken and shred. Return to crockpot and add water, a bit at a time, until the preferred consistency. (I used all the water, but then my salsa was spicy and I like my chili "juicy." If necessary season with salt and pepper and hot sauce. Cook another 15-30 minutes. Makes 4 hearty servings, about 2 cups each. Another option, not figured into the nutrition below--add a dollop of light sour cream to each serving. It was yum.

    Nutrition: cal: 314, carb: 40, fat: 6, protein: 42, sodium: 1797, fiber: 12
(Sodium is high from the salsa, but if you use no-salt-added beans and corn and don't season with the salt, there's a significant difference. I had to use what was on hand and didn't add salt to recipe and it was very flavorful.)
