Here is the recipe for the ladies that asked! Please give me input on any changes you made as I am always looking for ways to make it healthier/ lower in sodium. I've made this recipe many different ways such as adding salsa to the chicken while cooking or using flour tortillas instead of corn.
Crockpot Chipotle Pepper Chicken Enchiladas with Roasted Tomatoes and Green Chilies
This recipes yields about 43 enchiladas , 2 enchiladas per serving thus making 21.5 servings. Now typically I get 16 servings of two but today for some reason I got 21.5 servings.

Mccormick Grill Mates - Chipotle Pepper Marinade, 1.5 container (8 teaspoons ea.) 120 24 0 0

Without oil and McCormick seasoning:
Per Serving: 185 22 6 14
Place chicken in crockpot, fill crockpot ¾ full with water add 2Tbsp of oil and 1 packet of McCormick Grill mates if wanted other than that omit the oil and the seasoning mix. Place on high for 5 hours or cook on low over night. Chicken should be tender enough to fall apart easily.
Your going to save about ½ cup to 1 cup of the liquid from the crockpot and pour out the rest or you could save it as I do and use as a nice chicken stock. Shred all the chicken then toss back into the crock pot with the liquid. Mix in can of fired roasted tomatoes and green chilies as well as the other can of green chilies. Mix together. Then if using McCormick's seasoning , sprinkle roughly 4 tbsp of mix over chicken and then pour ½ can of Las Palmas green chile enchilada sauce into chicken. Stir all together.
Next start filling tortillas, I start with one tablespoon of filling (more if needed) then rolling tortillas . After filling all the tortillas and placing them in the pan, pour remaining enchilada sauce over them. Then sprinkle with the cheese. Place in over which should have been heated to 375 , until cheese is melted and bubbly!
I usually serve with brown spanish rice with fresh tomatoes , broccoli, corn or a salad for a complete meal !
