Baked Chicken Parmesan

Check out this healthy makeover of an old favorite:

2 pounds chicken tenderloins (about 12), evenly flattened
1 cup whole wheat flour
2 eggs +1/4 cup warm water
1 cup panko breadcrumbs
1 cup regular breadcrumbs
1 cup grated Parmesan cheese
1/2 tsp salt and 1 tsp ground black pepper
marinara sauce
3 slices provolone
1-2 cups shredded mozzarella
1/2 shredded Parmesan
fresh chopped parsley

    I LOVE this recipe. I like it coupled with whole wheat penne pasta.

    For a while I was, but there is such a discrepancy based on the specifics of what you use ... like full-fat/low-fat/fat-free cheese ... homemade sauce/jar sauce ... store bread crumbs/homemade breadcrumbs.....AND the issues with so many incorrect entries for the ingredients in the database... that I stopped because I was constantly correcting the stats. I am currently working on exploring sparkrecipes.com which seems to make recipe calculations a lot easier, but at this time I have foregone the #s :ohwell:
