Thai Coconut Meat!

I haven't made coci jerkiy in a long time, but we bought two Thai coconuts, we drank the water after a hard workout and I was going to make ice cream with the meat, but I decided to dehydrate it last night and I just had it on my salad!

Young COCONUT MEAT DEHYDRATED (coci jerky) , MIGHT BE THE BEST FOOD EVER!

Have any of you ever had it?

  • No, but I LOVE young coconuts and have a dehydrator so I'm definitely going to have to make it!

    Just a few questions: Do you just scrape out the meat? How long did you dehydrate it for and how thick are the pieces?

    Also - what's the difference between a whole coconut I can buy at say... Wal-mart Grocery verses a "young" coconut.

    A young coconut is green (unless it has been shucked... in that case it's an off-white color, not brown) and it is much sweeter than a "old coconut". The juice is less bitter and the meat is really soft and great to eat!

    I should also add that you can usually only find them at Whole Foods, Trader Joes, or your local Asian market.

    I make wraps out of the coconut meat. I have made raviolis with the coconut meat. You can use 2 cups of meat and add 2 T beet juice, spinach juice, or mango. You can use bananas too. To make the wraps you put meat into high power blender and then add the juice too. 2 cups should be enough to spin the meat. Then it will be similar to pancake batter. Then I pour the liquid on a Teflex sheet and dehydrate. They are really amazing!!!!!!!!!!



    You break open the coconut and take the meat out. I cut the meat into strips. I dehydrate them for just about 12 hours at 115 degrees.

    I actually bought these coconuts at Walmart. I live in Florida, so I am sure it depends where you are. I would just ask Walmart to see if they can get them.
