Guiltless baked mac n cheese

Options
This is a whole grain low fat version of my mom's amazing baked mac n cheese.

1 (12-14 oz) box of whole wheat pasta, cooked according to directions on package
1.5 7 oz. bags of Kraft fat free cheddar cheese
2 large, whole eggs (or you can use 1/2 c. egg substitute)
1.5 c. fat free cottage cheese (I use Breakstones)
1/4 tsp salt (I like Redmond's real salt)
1/4 cup minced sweet onion
1 cup reduced fat plain greek yogurt (I like Cabot)
1 TBSP garlic POWDER (not garlic salt!)

Mix cheese, eggs, yogurt, onion, and cottage cheese with seasonings (add pepper if you like it also). Mix in cooked pasta. Pour into greased 9x13 inch baking dish. Cover with foil. Bake at 350 for 30 minutes.

Serves 12 (as a side, or you can serve in larger portions as your main dish).

Each 12 portion serving has approximately:

200 calories (will depend on the brands you use, regular eggs or substitute, etc)
2 g fat
17 g protein
3 g fiber
411 mg sodium (your content will vary depending on brands used)
44 mg cholesterol
