My idea of cooking is chucking a few ingredients into my slow cooker.........

Any recipe that has more then 6 ingredients gets tossed away.........

The epicurious app on Android or i-whatever has a section called "I can barely cook" - a lot of it is salads or stuff that doesn't involve much technique. There is also a section for low-calorie, low-fat, or other healthy choices. I LOVE, LOVE, LOVE this app.
Also the whole foods app has some great recipes and an option for vegan food or vegetarian foods, as well as gluten-free (which tends to be more dense in calories, so be careful!), sugar conscious, low carb, etc.

Also, as you get more comfortable cooking, you should experiment with recipes and make them even healthier -- a lot of times "healthy" recipes aren't as great as you would think.

A few herbs and spices go a long way for flavor, and can make very appetizing food out of simple ingredients.

(If you can't tell, I love to cook!)
