I made a super easy modified version of this for dinner tonight. I am cooking for one, so I did the following:
Saute in a small drizzle of EVOO:
handful chopped white onion
1-2 tsp chopped garilc
Once that is cooked up and your pan is nice and warm add:
half a boiled sweet potato
1/2 cup black beans
2 tbsp salsa
Couple dashes of your fav seasoning (I have a chipotle pepper mix that is awesome)
Spread on top of a flatout, throw a little cheese on top if you like, and broil on high for just a couple mins to get the cheese all melted in.
Super good and filling, hit the spot when I was craving something cozy and comforting - and all that above came out to 549cals/83C/16F/24P/20Fiber0 -
