How can I make the cauliflower pizza more lean?

Just tried my first cauliflower pizza and found it to be tasty but overwhelmingly oily (thanks a lot 100g of full fat mozzarella).

So, apart from the obvious, use low fat cheese, are the other modifications I could make without compromising the integrity of the base? It seems really, really cheesy with the equal parts of cauliflower and cheese that most recipes seem to recommend.

cut the cheese in half and add in some bread crumbs (I use low carb crumbs)

I would mix in some other low fat cheeses. i personally dont like low fat mozz. So i would use a bit of full fat, and low fat parm, cheddar or something else. You could also throw some veggies on it for texture. Chopped peppers sounds nice!

Did you use whole eggs for the base/crust?

I like to eat more :-P

Affirmative on the whole egg, splitting yolk from white is probably where I draw the line for food modification (though a very valid suggestion for any one else that already does that none the less).

Bread crumbs are an intriguing avenue seeing as I am not low carb specifically, keen to try that.

Keep 'em coming (if there is anything else to suggest) :-)
