Buffalo chicken grilled cheese

2 slices of low calorie whole wheat bread (35 calories per slice)
2 oz of shredded chicken
1 slice of pepper jack cheese
1 TBSP of Hidden Valley Ranch Lite Dressing
1 TBSP of Franks Red Hot Buffalo sauce

Boil boneless skinless chicken breast till done. Shred by pulling apart with two forks. Mix 1 TBSP of Franks Red Hot buffalo sauce with 2 oz of shredded chicken. Spread 1 tablespoon of ranch dressing on one side of both slices of bread. Spread chicken mixture on one slice of bread top with cheese. Place other slice of bread, ranch dressing side down on top of cheese. Spray frying pan with non stick spray and heat. Once warm, place sandwich in fry pan and grill till golden brown. Flip over and grill other side until golden brown. Remove from pan, cut in half and enjoy!

This sandwich is only 245 calories and full of flavor. :love:

  • :love: I too love buffalo sauce, especially since I started this calorie counting! I saw the "same" recipe using bbq sauce too but I wanted SPICE so I changed it to buffalo sauce. I also could not find a low calorie or low fat pepper jack cheese. If I could that would lower the calories even more. Made them for the entire household for dinner and they all LOVED them! :love:
