Chicken enchiladas

If you like chicken enchiladas and looking for lower calories.
Chicken tenderloins (how much you need depends on how much you are making)
Red enchilada sauce (I get the Kroger brand, and you can get one can or two, depends on how much you plan to make)
Fajiita size tortillas ( You can use corn tortillas, but I will warn you when you roll the mix in the corn tortillas, it will break)
Shredded cheese
Green chili peppers ( this is optional, if you like a little spicyness)
Boil chicken. After the chicken is done, shred the chicken up. Mix chicken, half of the red sauce, a little bit of shredded cheese, and half the peppers in a bowl. Put foil down on your baking pan. Spoon some mix into each tortilla, roll tortilla. When you're done rolling, spread the rest of the red sauce over the enchiladas, sprinkle some cheese on top and add the rest of the peppers. Bake at 325 degrees for about 10 minutes or til the cheese is melted. 2 enchiladas are around 450 calories. If you use corn tortillas, calories will be less. The add sour cream if you want.

if you warm up the corn tortillas before rolling them, they wont break Thanks for sharing your recipe! It sounds soo good0

or if you soak them in teh red sauce they will be more flexible too, but only soak for like 30 seconds0
