I made these today with Spice Cake mix instead of Vanilla, super good!! I did not add the Pumpkin Pie Spice to the cake mix, but did put it in the frosting.

I made these this weekend. Although the flavor is good the texture is a little too moist for my liking. They almost seem mushy in the middle and I even tried overcooking them to see if it would help (it didn't). The frosting is also a little too soft and didn't firm up after being in the fridge which made the piping onto the cupcakes a little hard. Next time I'm going to use a little less pumpkin and see if it helps with the texture. Glad I found this recipe tho...pumpkin is a fall favorite in my house!
