Lunch ideas??

:wink: :smile: I usually eat salads for lunch and I try to mix it up by putting boiled eggs one day, marinated (sauteed) baby bella mushrooms another. I have 3 different low calories dressings I use, but I want some ideas. What else could I try in my salad? I like salads because I use spinach leaves which have the fiber I need to keep me full. Please share your ideas! Thanks! :smile:

    mixed greens salad (no dressing)
    Generic - Mixed Salad Greens, 1 cups
    New Star - Fresh Spinach-Young and Tender, 0.75 cups
    Nature's Path - Mesa Sunrise Raisins, 0.25 cup
    Generic - Chopped Walnuts (by Tbsp), 2 Tbsp
    Cranberries (Dried) - Trader Joe's- Greene's, 1/4 Cup
    Generic - 10 Raw Almonds, 10 almonds
    the Deli Counter - Feta Cheese, Crumbled, 1 oz (1/4 cup)
    fresh blueberries- 1/3 cup

    grilled chicken salad
    Generic - Red Leaf Lettuce, 0.25 cup - chopped
    Lettuce - Green leaf, raw, 1.5 cup shredded
    Carrots - Raw, Chopped (1/4 Cup), 1/4 cup
    Fresh Raw - *Red Tomato, 0.25 medium tomato
    Grilled Chicken Breast - Meat Only-No Skin, 4 oz
    Cheese - Sharp Cheddar - Shredded , 1/4 cup (over the chicken so it can melt a little)
    Generic - 1/2 Hard Boiled Egg With Yolk, 1/2 egg cooked

    some times i do a spinach salad with a light raspberry vinagerette, add some strawberrys and walnuts and light feta... i love it!

    Do you eat meat? I often put left over meat in my salads, steak, chicken, taco meat, etc.

    baby spinach, craisins, feta cheese, almond slivers (or walnuts, whatever floats your boat), grilled chicken, light honey mustard dressing.

    Yes I do eat meat, but I rarely put it in my salads because I know that's what I may end up having for dinner. Thanks for all the ideas! I look forward to going grocery shopping today!
  • Two "treat" options for salads are:
    1 - Taco Salad (use ground turkey with taco seasoning, and then top it with salsa, sour cream & even taco strips if you like)
    2 - Grilled Chicken Caesar Salad (Rennee's light dressing is good...)

    I have also fallen in the love with Apple Salad recently:
    2 Crisp Apples
    2 Tablespoon Raw Walnuts – chopped
    1/2 cup Grapes (halved)
    2 Stalks Celery, Sliced
    2 Tablespoons Reduced Fat Mayonnaise
    1 Tablespoon Fresh Lemon Juice
    Salt and Pepper to taste
    Wisk together the mayonnaise and lemon juice, and salt & pepper, until combined.
    Cut celery and apple into small squares. Toss all ingredients with dressing, and serve on top of your favourite greens.

    At the risk of my idea being boring, I like simplicity and something easy to prepare to take to work. I eat 2 pieces of whole wheat bread with 2 pieces of lean meat, an ounce of cheddar cheese on the side (or fat free yogurt) and a piece of fruit and throw in a half a cup of veggies or small salad. This is very filling and satisfying but only 400-420 calories. very low fat too. On a 1200 calorie diet limit this works out well.
