Coconut flour

Anyone on here experienced in substituting coconut flour for regular flour in a recipe? I just bought some and was excited to use it in my favorite muffin recipe but from looking online I am starting to think it's a far more complicated switch than I thought. Is there anyone who can help me figure out how to alter my recipe?

Coconut flour is really dry and hard to work with. I find it unstable unless it is used in conjunction with another flour like almond or flaxmeal.
You cannot just sub coconut flour for regular flour in a recipe (and don't even try)0 -
I love coconut flour!!! You have to use lots of eggs when using coconut flour alone - it soaks up a lot of moisture, and I've read that eggs really help. I make this banana muffin recipe every week and eat 2 of these muffins a day (kind of like my version of an energy bar) - they are yummy!!
2 bananas, mashed
5 eggs
1/4 cup coconut oil
1/4 cup coconut flour
1 tsp baking soda
1 tsp vanilla
Mix all ingredients together in a mixer and divide into greased muffin tin. Bake for 17-20 minutes until cooked through and brown on the edges. They are moist and delicious and give you loads of energy. No added sugar, coconut flour offers low carbs, but high fiber. They are 144 calories a muffin.0 -
Never tried it. I've tried quinoa flour though, and it tends to need a little extra moisture in baked goods as well, so I add some applesauce or a little extra water. Just made some yummy pumpkin muffins with them. I find for muffins and cakes where a spongy texture is needed, I can substitute 1/2 or a little more quinoa flour to regular flour. And BTW my new favorite regular flour is King Arthur White Whole Wheat.0

I haven't tried it yet, but from what I read, there are two basic ways to go about it. Sub no more than half the flour and add an equal amount of water to the coconut flour, or use all coconut flour but add a half dozen eggs our so for every cup of coconut flour.0

I do a 60/40 mix of 60% coconut flour and 40% almond meal..............when subbing in recipes.0

What you have to realize with coconut flour is that it has no gluten, so it won't hold together like other flours. That said eggs are the thing that holds the recipe together when you use just coconut flour.
