Stuffed Sweet Mini Peppers with Broccoli and Chives

Low carb, low cal, sweet and oh so tasty!

Serves 2-3

5 sweet mini peppers
4 oz of cream cheese, softened
1/3 cup of broccoli florets, finely chopped
3 tbsp of chopped chives
1/3 cup of shredded cheese


Preheat oven to 400F. Slice peppers lengthwise and remove seeds. In a bowl combine cream cheese, broccoli, and chives. Stuff sliced peppers with cream cheese mixture until all are stuffed. Place on baking sheet in oven for 10 minutes. Remove add a pinch of shredded cheese on individual peppers. Bake for an additional 3 minutes. Remove, cool slightly, and serve.
