Sorry I hit enter by accident before I got to finish putting the topic in. This is called "Nutty Quinoa with Shrimp"
In a medium pan sautee 1/4 cup each chopped onions, chopped carrots, chopped celery in 1/2 teaspoon of olive oil. Add 1 cup water, 1/2 cup uncooked quiona, 1 tbsp peanut butter(I use all natural - no sodium and no preservatives) and 1/4 tsp reduced-sodium soy sauce. Bring to a boil, reduce hat, cover and simmer until water is absorbed.
In a second pan saute 2 cups baby bok choy, 1/2 tsp chopped garlic, salt & pepper in 1 tsp olive oil. Add 3 oz extra large raw, peeled, tail - off shrimp (about 6). cook until shrimp are pink about 5 minutes. Serve shrimp mixture over quinoa mixture.
