Easy, healthy dishes to warm up during lunch at work?

My office is in that weird inbetween time where it's too cold for AC but too warm for the building manager to turn on a boiler...SO, that means no heat for a while and a steady 60ish degrees in here...BRRR.

Usually I eat salads for lunch, but since it's gotten cold \I've been forcing them down. What are your "go to" meals for something warm?? Looking for something I can make and reheat throughout the week for a few meals.

  • Make a crockpot of turkey chili! It is easy, healthy, and cheap, and you can get a lot of meals out of it. Then you can even mix it up and put it on a salad for a taco-like salad, have it with eggs, all sorts of options!

    Homemade soups usually pretty low cal since you control what goes in them
  • i like to do chicken and rice stir-frys with vegetables and a bit of sauce =]

    Penne pasta with a tomato sauce. I cook up a heap at the weekend. Yum. Actually, I fancy some now.

    For lunch at work, I make myself a sandwich. I toast it before I pack it, add the meat and mustard, then microwave it at work. It comes out perfect. I normally eat a salad and string cheese with it, but since you want warm food... Maybe try a frozen vegetable with it?

    I'd suggest getting a crockpot if you don't have one! This weekend I put 2 frozen chicken breasts, 1 cup of uncooked brown rice, 2 cups reduced sodium chicken broth & a can of black beans (rinsed & drained), some salt, pepper & basil into my crockpot for 4 hours on high & it's DELICIOUS! I got 5 meals out of it (2 in the freezer for desperation dinners) and each serving is 288 calories & super filling

    Assuming you had a hot dinner, leftovers. That is my go to lunch no matter the temperature inside or out.

    Try quinoa - cook some in chicken broth to give it more flavor, toss in some grilled chicken breasts, broccoli, green beans, carrots (really, any vegetable you like), and just a tad bit of feta or boursin cheese so you get that bit of a tang every now and then to keep it interesting :)
