Oh wow i created something amazing and delicious.

So i REALLY wanted something spicey and mexican and yummy tonight but i did not want a taco (tortillas are outragious in calories and fat) and my DF dosent like fajitas in the hard shell SO. i made a Mexican Chicken Salad! and i thought it was going to be really bad for me but not that bad really so heres the recipie.

2 medium chicken breasts
1/2 a large green bell pepper
1/3 large onion
Small Jalapeno
1/2 head lettuce
your favorite spicey seasonings
1.5 tbls ranch (i didnt have any lite or fat free)
1 crunchy taco shell
cheese is optional

Cut the chicken into bite size peices cover in seasoning and sautee in pan (i used olive oil) when chicken is almost done start sauteeing the bell pepper onion and jalapeno with the chicken untill vegies and done. while waiting for vegies/chicken cut lettuce up and place in bowl. when chicken and veggies done place ontop of lettuce. crunch up the taco shell ontop add ranch and enjoy!

    Awesome, thanks for sharing!

    I like to make chicken tortilla wraps, kind of like the ones they have at McDonald's, except with whole wheat tortillas and also I add spicy peppers like jalepenos and anaheim peppers etc., and I add green chili. The hot peppers, green chili and hot salsa that I add have very little calories. I live in New Mexico and I love spicy food.
