    Mmm, these sound yummy. Adding some coconut sounds good too. I will have to try them!

    I just made some one step pumpkin cupcakes like this the other day - just took the spice cake mix by Betty Crocker and added a can of pumpkin - delicious. :)

    Ok MFP, I told you. Seriously, I went to store on way home from work and now have made the pineapple and pumpkin muffins. Awesome, as I write this my son is eating his second pumpkin muffin. They rock!:laugh:

    Thanks for posting! I had done something similar using angel food cake mix but didn't like them. Hadn't dawned on me to try yellow cake mix!!
