Im really busy tonight after work. So does anyone have an idea. NO GOING OUT TO EAT.

    Get some fresh tortellini and pesto in the refrigerator section at the grocery store. Ready in about 10 mins, just watch portion size.

    REALLY easy?

    Minute brown rice cups (zap them for 1 minute in the microwave), yam (slice it in half and put it in the microwave zap it for 5 minutes - voila! yam! ) and any fish fillet, lemon, salt and pepper. Oven for 20 minutes.

    Tah dah!

    Dinner is served.

    Easy AND healthy!

    90% of the recipes people suggest on this website is just junk cleverly disguised as healthy food.

  • Grilled chicken salad. Instead of grilling pan fry it (faster) with no breading of course :) and slice and put on top of salad greens and add some dressing and maybe some cheese? I had one for lunch today! So yummy!!

    2 eggs whole, 2-3 egg white omelete with mushrooms, spinach, tomatoes and a sprinke of mozz cheese. QUick easy Cheap and filling

    I feel it my duty to add the requisite reminder to check the nutritional facts for anything precooked (cals, fat, sodium, etc.)

    1 big leaf (or a bit more) green leaf lettuce
    tyson grilled fajita chicken strips (comes in a 6 oz package usually in the chicken section of the meat section)
    little bit of light ranch dressing
    parmesan cheese

    Should be 3-400 calories depending on the toritilla you buy (mines 150 calories each). The type of cheese is important, parmesan should be a lot less than shredded mexican or something.

    Then you can take the rest for lunch tomorrow :)

    it will be even better for you if you use less chicken!

    Actually it will be even better if you use CORN tortillas.
    They are usually around 1/2 the calories of a regular tortilla. I make toquitos with small corn tortillas that are 2 tortillas for 90 calories.

    eggs are my "go to" foods for a quick/easy dinner - scrambled eggs, turkey sausage, toast & a glass of milk. YUM!!

    A couple of chicken tenders or chicken breast cut into bite size pieces. Sautee with veggies in a skillet until cooked. Turn the heat off. Add some goat cheese or feta or a Laughing Cow wedge, let melt a little, stir. Serve over rice, cous cous, quinoa, or salad. Total prep/cook time around 20 minutes.

    Where do you find the CORN tortillas ?? I can never find them, unless they are the premade ones they sell in the box (TB)....

    brown rice
    sriracha sauce
    teriyaki sauce

    Takes 10 mins to make because of the rice. it is so delicious.

    Grilled or baked chicken (no skin), with a side of steamed vegetables, you can also flavor your chicken, with lemon/seasoning salts (the possibilities are endless), or other spices. Side salad, light dressing. One small piece of bread.

    In the stores here, they are right next to the flour tortillas... although, we have a really diverse population where I live, so if you're in midwest suburbia or something, I guess that wouldn't necessarily be the case.

    Also try the Hispanic aisle, or you could get tostadas.

    Stir fry is always a go to for me. Also, breakfast for dinner (eggs, potatoes, veggies ect). Or if you aren't too worried about carbs there is always spaghetti.

    I just want to say good for you for sticking with your commitment to not eat out! Sometimes it can be so hard when you're really busy so I'm proud of you :) Anyway, I agree that a grilled chicken salad is definitely the way to go! I buy prewashed baby greens (marketside half and half is great because it has half spinach) and then top it with warm chopped grilled chicken (I season chicken breast with salt & pepper and cook through on my grill pan). Toss and top with 2 Tablespoons of your favorite dressing (right now I'm loving Ken's Light Options Raspberry Walnut Dressing)

    I keep a bag of nikishi rice, a rice cooker and fish fillets on hand.
    toss a bag of frozen veggies in the rice cooker steamer part.
