Black Bean and Onion Soup

1 tbs canola oil
2 smalll onions, chopped
3 cloves garlic, minced
2 15 oz cans of black beans drained and rinsed
1 tsp ground cumin
1 tsp chili powder
3 cups water
1 green pepper chopped
salt and pepper to taste

1. Heat the oil in a large pot over medium heat. Add the onions and garlic and saute until soft (7ish minutes). Add the beans, water, cumin and chili powder and bring to a boil. Add green pepper, reduce heat and simmer for 10 minutes or so.

2. Allow soup to cool slightly and put about half in a blender and puree. Return it to the pot and season with salt and pepper to taste and heat it back up.

serves 6 with 118 calories per serving

This was dinner tonight and it was pretty tasty. The next time I make it I may play with the spices a bit so I get a little burn. We'll see. I had a couple tablespoons of reduced fat cheddar cheese on mine. Next time I'll probably had a little sourcream or plain greek yogurt and maybe some green onions.
