vegetarian casserole

2 leeks
1 onion chopped
1 or 2 peppers
500g passatta sieved toms
sweetcorn tinned or frozen 75g-100g
beans of your choosing i used
butter beans 235grams
borlotti beans 240grams
bouillion powdered stock 5grams
sundried tomato paste 30 grams
cracked black pepper and dried herbs
plus
veggie meatballs or veggie sausages of your choosing can work without too

dry fry the onions and leek till starting to brown then add pepper and sweetcorn fry for a few more moments. then add passatal black pepper and herbs, stock and tom paste plus the beans add a little bit of water stir bring to the boil reduce heat and simmer for 20 mins till desired consistency is reached. if adding meatballs i oven cook mine first then pour casserole sauce over meatballs/ sausage in the serving bowl. serve with jacket spud on its own with bread how ever you like it. delish :-)

you can add mushrooms too or any veg you like really. this made a big pot enough for 4 large servings 400grams or 8 200gram servings your amounts may vary total cals for mine were 233.84 cals and 0.803 sat fat 4.789 total fat per 400 gram serving without meatballs or sausage.

    Sounds tasty. I've never cooked with leeks before but I've been meaning to incorporate them. Thanks for sharing.

    leeks are awesome they are like a delicate onion flavour i added 3 large ones to my recipe but i like leeks lol i thought 2 would be plenty.
