HG Turkey and Veggie Meatloaf Minis

I made Hungry Girl Turkey and Veggie Meatloaf Minis for dinner tonight and they were awesome! The only thing I'll do different next time is precook the broccoli slaw a little so it's not quite as crunchy in the finished product. They're in the database and I can get behind meatloaf that's 142 calories per serving (I had 2).

    My family isn't a huge fan of broccoli slaw, but I do shred carrots & zucchini and they LOVE it. I also have made it with spaghetti sauce (just for something different).

    Btw, this recipe does freeze really well.

    I think microwaving the slaw for a minute or two before mixing it in would make a world of difference in the texture and I'm a fiend for broccoli. I love the individual serving thing too. It makes it way easier than cutting a piece that is much larger than it should be and pretending you're only having the calories in one serving:)
