Hunza Pie (very filling savoury muffin)

This is my take on Hunza Pie. Traditionally this 70s hippie dish is supposed to be made with brown rice and has a pastry base, but i've substituted the rice for barley which is even more filling and low calorie than brown rice, and i've made it into individual muffins rather than having pastry.

Ingredients:

1 cup barley, cooked according to packet instructions
1cup cooked french lentils
1 cup mashed pumpkin
Freshly grated ricotta cheese (to taste)
2 eggs
1 teaspoon ground cumin
1 tsp dried chillies
2 tbs roasted pepitas
2 tbs sunflower seeds
1 tbs olive oil
Freshly cracked pepper to taste.
chopped parsley


Mix ingredients together in a bowl. Spoon into muffin cups. Cook in a moderately hot oven until lightly brown and muffins are solid.

This could be easily adapted to use whatever ingredients you have around the house such as sweet potato instead of pumpkin or other herbs and spices. Just keep the barley, seeds and eggs the same and you have a very healthy snack! Can even be a decent meal when served with relish some low fat natural yoghurt and a side salad.
