1lb boneless skinless chicken
1 large zucchini
1 can diced tomatoes
1 White onion
1 can garbanzo beans
1 cup chicken stock
2 tbsp olive oil
½ tsp cayenne pepper
½ tsp ground cinnamon
1 tsp ground cumin
Chopped cilantro for garnish

Cook chicken in olive oil in large pan over medium heat.

Add chopped zucchini and onion and cook until soft

Add vegetable stock, garbanzo beans, diced tomatoes, cayenne pepper, cinnamon and cumin.

Bring to a simmer and reduce to low heat.

Add chopped cilantro garnish and serve.



Side:

1 box couscous

Calls for 2 cups chicken stock
1 tbsp olive oil
¼ cup chopped cilantro
2 tbsp pine nuts (toasted)
2 tbsp golden raisins

Cook couscous according to directions.
Add cilantro, pine nuts, and golden raisins and serve.
