New thing to me: my nutritionist told me that raw carrots tend to have less carbs than cooked. So she prefers that when I eat a carrot to have raw and not cooked.

Does anyone know the reason? I stopped cooking carrots!!

Isn't that true for most vegy's? They lose some of their nutrients when cooked. I LOVE them steamed.

When you cook carrots it makes more of their sugars accessible to your digestive system. When they are raw some of the sugars pass through as fiber. That's the way a cook explained it to me once. All I know is if you cook them my husband won't eat them.

I don't like them cooked anyway - grew up eating them raw as a snack while Mum was getting dinner ready.
