Fettuccini and Peppers

One of my aunts signature dishes!

Single Serving:

1 oz fettuccini or thin spaghetti (whatever you have on hand)
~half fresh bell pepper sliced thin (I usually just use green peppers since the others are so expensive but I went to Costco this weekend and got a combo pack. The extra red, yellow and orange add great flavor and makes it look nice!)
Tablespoon of capers
Coarsely chopped fresh garlic cloves (about 2)
Green olives

Saute peppers in small amount of olive oil for a few minutes. Tastes best when peppers still have a crunch to them. Add garlic, capers and olives and saute for about 2 minutes. Add to pasta. Top with Parmesan cheese.

So simple & so delicious! Calories vary depending on amount of pasta/veggies used.
