I found this recipe on the Eating Well website and will be making tonight for my husbands bday.

2 tbsp Olive Oil, divided
2 large onions
1 tbsp brown sugar
1/2 cup reduced-sodium beef broth
1 tbsp balsamic vinegar
1 lb beef tenderloin or trimmed sirloin steak about 1 in thick, cut into four steaks
1/4 cup crumbled gorgonzola or blue cheese
salt and pepper to taste

Heat 1 tbsp oil in large skillet over medium heat, Add onions and brown sugar, stirring often, until the onions are very tender and golden brown. Add broth, vinegar, and cook stirring until liquid has almost evaporated. Transfer the onions to a bowl; cover to keep warm.

Season steak with salt and pepper. Heat remaining oil in the pan over medium-high heat. Add steaks and cook until browned, 3 - 5 min. Turn over and top with cheese. Reduce heat to med-low, cover and cook until the cheese is melted and the steaks are cooked to desired doneness, 3 - 5 min for medium rare.....Serve with onions.
