Lentil and Edamame Salad

This has been my lunch and dinner this week- it keeps you SO full!!!

~8 cups cooked lentils (I cook mine in half chicken broth/water with one onion)
2 cups shelled edamame
2 ears of white corn (about 1.5 cups)
1 onion (I cooked mine with the lentils)
2 tablespoons olive oil
.25 cup apple cider vinegar
salt and pepper taste

Cook the lentils and onion. After the lentis are done cooking, remove excess liquid and combine with corn, edamame, vinegar, oil, salt and pepper. Serve hot or cold- I prefer cold.

This recipe makes between 6-8 servings. I made one serving, one cup.
