Give me your favorite squash recipes!
Right now I have an acorn squash and a spaghetti squash...

    I slice yellow (summer) squash. Put in pan with water. (Salt is optional). Boil till just tender. Drain, Dice a fresh tomato or two and toss in with squash. Add a little black pepper (if you want). Then throw in some reduced fat shredded cheddar cheese. Stir til melts.
    My kids thought veggies were evil. This was the only way they would eat yellow squash.
    Sorry I can't give exact amounts but I've always threw it toghther. Quick and easy!

    I love to cut the acorn squash in half and fill it with a little butter and brown sugar then bake it, put just enough to taste with each bite. My husband however has like a butter/sugar pool. But he is skinny lol

    I also have a skinny husband. He likes to stuff acorn squash with sausage and bake. It does taste pretty good, but oh my the fat and calories from the sausage!
  • I can't get enough of this the last few days:

    Butternut Squash Root Yum

    In the mix:

    4 oz daikon
    1 small carrot
    1 small (small!) shallot
    1 cup butternut squash
    To make:

    Get the squash in a grill in some oil over high heat. Dice up the shallot. Sweat these while you work on the other veggies.
    Take the daikon and the carrot and shred it up.
    Cook until daikon is a bit transparent.
    Eat!
