Cheese Spinach Quiche

I just tried this...I am going to post the way the actual recipe reads and then put how I actually made it.....I made a few substitutions

1 cup(s) (chopped) onion(s), yellow, sliced
10 oz chopped frozen spinach, thawed and well-drained
1 cup(s) fat-free ricotta cheese
3/4 cup(s) shredded fat-free cheddar cheese
2 slice(s) Borden Fat Free Singles American Cheese, or other brand, torn
1/4 cup(s) fat-free blue cheese dressing
3 large egg(s), lightly beaten
1 tsp Dijon mustard
1 tsp Dijon mustard
1 tsp dried oregano
1/2 tsp table salt
1/4 cup(s) grated Parmesan cheese

Instructions
Preheat oven to 375ºF. Coat a 9-inch nonstick pie pan with cooking spray.

Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add onion and sauté until soft and golden, about 5 minutes.

Transfer onions to a large bowl and add spinach, ricotta, cheddar cheese, American cheese, salad dressing, eggs, mustard, oregano, salt and black pepper; mix until well blended. Spoon mixture into prepared pan and smooth top with back of a spoon. Sprinkle with parmesan grated cheese topping.

Bake until a knife inserted near center comes out clean, about 30 minutes. Let stand 10 minutes before slicing into 6 pieces.

This was excellent! Made it with fat free cottage cheese instead of ricotta, used 2 servings of reduced fat feta in place of the blue cheese dressing and I also used fresh spinach (3 cups is what I used). And I did not use the American Cheese - I saved some of the cheddar cheese and added to the top with the parmesan cheese.

This makes 4 or 6 servings depending on the number of calories you want.

Per the recipe database a serving is as follows:
(4 servings) 430 calories (I had to do 4 servings as I am eating this for dinner tonight and needed to reach my calorie goal)
19 carbs
13 fat
25 protein
655 sodium ( I cringed when I saw the sodium as I watch my sodium intake religiously, guess it is to be expected with all the cheeses)
