Mashed Potatoes with Toasted Garlic

1 1/2 pounds baking potatoes
7 garlic cloves, peeled
1/2 cup low fat (1% milk )
2 Tbs butter or margarine
1/2 tsp salt
1/4 pepper
chopped chives

1, Preheat oven to 425

2. Pierce potatoes several times with a fork. Wrap garlic in foil. Place potatoes and garlic on baking sheet Bake until potatoes pierce easily with fork and garlic is softened about 45 minutes. Cool until easy to handle about 10 minutes

3 Using a knife, slit potatoes open; with a spoon, scoop out pulp and place in medium bowl.

4. In small saucepan, mash garlic , add milk, salt, butter abd pepper. Cook over low heat, strinng, until heated.

5. Pour hot milk mixture over potatoes mash togther until smooth. Serve with chives.
