Help! Need unrefridgerated snackies/sides

Hello MFPers! Let me pick your brains! :)

I'll be away this weekend camping with my "Little" from Big Brothers/Big Sisters at an organized event with other Bigs/Littles. It promises to be fun, but they'll be feeding us (Lunch, Dinner, Campfire, Breakfast and Lunch) and it's unlikely to be very healthful.

I wasn't going to sweat it and just be moderate about whatever they served... but after this morning's weigh-in I'm actually possibly positioned to lose 10 lbs this month. I want to keep that momentum!

I'm utterly uninspired about this! All I can think of is baby carrots and almonds, and Fiber One bars.

Here's the criteria:

- I can't refrigerate it
- I can't cook it once I'm there - I can prepare/cook stuff before leaving though
- I'd like it to be vegetably/legumey (yeah, I make up words)
- Want to use it as a side to something they might already be serving (like hot dogs)

    SPANISH TORTILLAS / FRITTATAS - will send some recipe ideas. Remember that in Spain, these are left out all day and eaten at room temp. Put them in a tupperware and enjoy along with some crudites or fruit...

    Fruit and raw vegies are always a good choice, and most of them don't need to be refrigerated or cooked. You can also munch on dry cereal or granola. Maybe get some baked chips or baked crackers for an alternative to greasy ones. Good luck and have a great trip!

    how about just like some raw vegetables like broccoli and carrots and stuff? celery sticks and peanut butter :)

    You could get some 100 calories snacks that doesn't require refrigeration, if you are a vegetarian, you get some soy chips by Genosoy ( rice cake type snacks)
  • Vacuum packed white chunk chicken, salsa, lettuce leaf = one heck of a wrap
    Celery sticks/almond butter
    mixed raw nuts
    banana slices with nuttela

    My favorite is a whole container full with cherry tomatoes. They hold up nicely, are refreshing and sweet. Sometimes I add black olives but it depends on how many calories I have available

    these are a few foods I take backpacking, maybe they will help:

    Tuna pouches or chicken pouches
    apples
    oranges or clementines
    carrots
    almonds
    granola bars
    beef jerky
    cheese sticks
    peanut butter
    bagels or pita bread
    dried fruit
    oatmeal (I put it in a ziploc frezer bag and add hot water from my camp stove)
    dry cereal
    triscuits or wheat thins
    individual packs of fruit or apple sauce

    I know these items are not very "vegetably" like you request but can you bring a small cooler? If so you could bring yogurt and fresh cut vegtables. I am not sure where you are located but with the cooler weather it is possible to cut up celery, carrots, and maybe broccoli or cauliflower and leave it sitting out. I dont think it will spoil as long as it is not in the sun. A smaller personal cooler sounds like the best bet.

    *wanted to add the cherry tomatoes are a good idea that someone mentioned. I have never tried the veggie chips, they might be tasty

    Peanut Butter with apples/celery/rice cakes

    Raw broccoli/cauliflower florets with an unopened bottle of lite salad dressing (buy a small bottle since you may need to toss it after being out a full day)

    Kashi Heart-to-Heart Honey Oat cereal makes for a great snack dry - just measure out single servings into baggies (I think this is a nice alternative to the high sugar content of granolas or trail mixes)

    If you have a cooler you could even do something like conch salad, although I doubt you'd get your Little to eat "raw" snail that's been "cooked" in citrus juice. ;)

    I just made a list of healthy stuff for camping trips to snack on, here's what I have so far:

    Granola bars or any of the slim fast/special K/diet bars, rice cakes, 100 calorie packs, air popped popcorn, beef jerkey, trail mix, mixed nuts & seeds, apples, bananas, pears, peaches, oranges, grapes, pretzels, pudding cups, your favorite dried cereal, and gum!

    If it doesn't bother you to eat it cold, you might even try instant oatmeal. I'm sure you'll have water available to mix with it.

    You could make yourself some trail mix, some fruit should be ok.

    You can do some raw veggies to have on the side with say a burger or something they are serving.

    Peanut butter travels well. You could get a small can of garbanzo beans I rinse and drain them and put them on my salad cold. If you have salad there you can just add them to it.

    I eat all sorts of nuts, dried fruits, veggie chips, granola, single one serving snack packs - anything you could give a child, you'll find in the snack aisle. Many veggies will hold up pretty well in the shade or a light colored back pack or similar. Lots of pickled stuff is also possible. Have fun.
  • Canned black olives are delicious!

    Have you seen those lil 'lunch packs' they have in the tuna section? They have small ones that come with a pull-tab can of tuna, chicken, or crab salad and a few crackers. They also have bigger ones that contain the can and crackers along with a fruit cup, but usually the fruit is the sugary, syrupy kind, so I'd just get the small packs.

    Pita chips and some sort of non-refrigerated dip. I'm sure they'll have dips at the camp.

    Those flavored almonds (like the wasabi-soy sauce ones) and cheese are good. I would guess the camp will have the cheese. But if not, the almonds are still good by themselves.

    You could make a 3 bean salad. mix a can of green beans, a can of mixed beans together with low fat Italian dressing, done. I would add onions to it too but a lot of people do like them anyways.

    veggie pasta and light vinagrette dressing. should hold now refridgeration. It is good cold and you can keep it in a cooler.

    cereal...I am sure that they will have milk. if not you can bring soy milk. doesn't require refridgeration. or dry milk and mix with water.

    You can by dried hummus. All you need is water and a bowl to mix it in.
