I need Veg!

I was having a look through my food diary and I noticed that there is not one day where I have eaten fresh fruit or vegetables.. :noway:
I am not a vegetable person at all but I really need to eat a balanced healthy diet. I havent a clue about veg or what half of them are, never mind cooking them!!
So would any of you like to share your favourite, easy receipies that would have a good amount of veg in them and how to cook them ?
(I live in Ireland so some ingredients I might not have a clue of like egg beaters for example!!)

heres a recipe im gonna try out tonight...
2 onion per person
cut a cross on the onion, almost to the bottom
put about 5g of butter in each of it
put in the over for 40-45 min
add some cheese (about 10g each onion)
put back in the over to let melt
about 155 cal for 2 onions...
if not that, take any veg that you can find in your produce section .. broccoli, carrots, leeks, peas, corn, green beans, broad bean, snow peas, and steam or boil them until tender.. i make sure i have at least one of those on every dinner plate...
other way is to make stir frys.. take a selection of above veg, add sweet pepper and onion, in a pan put 1 tbsp of olive oil, and fry until tender, buy a jar of sauce ( i buy the organic ones becasue you have less chances to find crap in them,, i like the seed of change ones, they are very good and natural) or just soy sauce.. serve on rice and voila !!
make pizzas out of tortillas !!!,, a bit of pizza sauce (i use tomato pasta sauce) on the tortilla, add all the veg you can think of,, top with cheese ... (go easy on the cheese..) stick in the over..
i do a vegetable rice as well.. cook rice in vegetable broth (i buy the cube stuff) in a pan, put 1 tbsp of olive oil (or any oil) and fry (add in that order) onion, pepper, muchsrooms, sweet corn. combine with rice,,, very yummy,, you can serve that with chicken ...
dare yourself to try new veg as well.. and go with whats on season,,
eating veg can be as simple as taking them out the fridge and eating them raw..
there .. you have all my tricks.. lol

Have you every made chili? Toss some frozen corn and peas into the pot and some diced up carrot. All good.
If you make soup too... try adding more in there too.0 -
Asparagus, green beans, tiny tomatoes (like grape, cherry, etc...). Toss with a little extra virigin olive oil, salt & pepper. Put on a baking tray. Oven at 425 for about 15 min., mixing after the first 5 min. They'll look wrinkly, but they taste oh, so good & it is really easy to make.
You can do this with baby potatoes, too, but the baking time changes to 30 min. I like to add rosemary to these, too.:

I don't know if they have this in Ireland, but I've bought "steam in bag" veggies. I think Birds Eye makes them. Freezer section. You pop a bag into the microwave for about 4-5 min. & you have tasty, steamed veggies. Add some salt & pepper or some other spices & it makes it even better!

I really like the vegetable rice idea, really sounds tasty and also the steamed vege bag, we have them here but I always walk past them in the shops, but wont do that again..
Like the idea of the tortilla pizza too..

Veggie Stir Fry
Olive oil, enough to just grease the pan
Oniin powder and garlic powder, just a pinch of each
grate 1 apple, 1 zucchini, 1 carrot, 1 eggplant, stir fry on low/med heat, don't want to fry it.... 10-15 minutes tops...
pour over a big green mixed salad, drippings and all and add parmasean cheese....add slithered almonds and sliced cold cucumbers, also you can add a raspberry vinegarette if you want.... or a oil and vinegar dressing, toss and yummy in the tummy

My whole family loves asparagus, artichoke, and fresh peas/green beans. We steam them and I let the kids dip them in a tiny bit of low sodium margarine. Sooo good.
I think what you need to do is hit your local veggie stand and get one pc of each veggie out there. Then see waht you like and go from there.0 -
Fruit is delicious. Seriously, if you come across a fruit you've never had, grab it and try it.
I like to make microwave baked lite apples.
Take an apple and chop it up. Put it into a bowl and sprinkle on cinnamon, allspice, and a bit of sugar (or sugar substitute). If you're feeling adventurous, add a splash of diet soda. Then microwave for 2 minutes. Mmmmm!0 -

I generally can't get all my veggies in (because I hate them... I'm as bad as a three year old). So I try to drink one glass of this a day to get in some of those essential nutrients. I love fruit though, so that helps. :bigsmile:
Also - try Baked Okra!
I used to love fried okra, but all that oil makes me sick now (and uses up a lot of cals!) so I bake it. You cut up fresh okra or buy it cut already from the frozen section. Lay it out flat on a cookie sheet. Mix salt, petter, flour and cornmeal (equal parts flour/cornmeal) and sprinkle on top making a light covering.
Bake for 15-20 minutes at 350 degrees and wa la. Yummy, crunchy okra without all the nasty fat and oil. :drinker:0 -

And thanks for the tip of making a drink out of the veggies!! Never thought of that and our blender is just sitting in the cupboard gathering dust!!
It's little things like this that make these boards and the diet so much more bareable!!

Here's an easy way to get veggies in. If you eat frozen meals like Lean Cuisine or WW Smart Ones, just 1 cup of veggies to them. For example I like the Macaroni & Cheese and Fettuccine meals. I add mixed frozen veggies to the mac & cheese and frozen broccoli to the fettuccine meals. Besides help you get your veggies in, it also helps you feel more full.0

I'm the same. So I drink it. V8, used to hate, now I know that I'm getting my veggies without another salad. V8 Fusion Lite looks good too. Gonna make a Smoothie with it.0

I think I will just stick to the fresh instead of blended!!0
