Chicken Salsa Soup

2 cups water
6 ounces skinless chicken breast, chopped into small pieces
1 cup chicken broth, low sodium
1/2 cup cooked brown rice
1 cup fresh salsa
1 tsp olive oil
Jalapeno pepper, minced
1/2 tsp. salt
Dash of pepper
6 medium garlic cloves, chopped

Add all ingredients except garlic to medium pot and heat on medium for 30 minutes. Reduce heat, add garlic, and simmer over low heat for an additional 15 minutes. Serve hot.

Servings: 4

Calories per serving: 110
Fat: 2g
Carbohydrates: 12 g
Protein: 11g

I used jar salsa instead of fresh, and jar chopped garlic. It was still delicious. Also I used canned jalapenos. This way you can make it as spicy as you want.
