Curry Meatballs - Paleo Friendly

Preheat Oven to 400 degrees
1 1/2 pound 93/7 Lean Ground, Grass Fed Beef
1/2 cup chopped purple onion
1 organic egg
1 T Curry Powder (red curry if you can find it)
1/2 t Sea Salt
In a large bowl, mix all ingredients together with hands until blended. Shape into 16 meatballs, Spray baking dish with coconut oil, place meatballs in dish, and bake uncovered for 25-30 minutes.
Curry Sauce for Meatballs
1 T Coconut Oil
1 t garlic (fresh)
1 T Curry Powder
2 T Organic Tomato Paste
1/2 cup low sodium Chicken Broth
In a large skillet, saute the garlic in the coconut oil for 2-3 minutes over medium heat. Add curry and tomato paste and whisk together, Add broth and continue to whisk until the sauce is smooth. Bring to a simmer. After the meatballs come out of the oven, add them to the sauce in the skillet and coat well. Cover and let simmer an additional 5 - 10 minutes.
Makes 16 Meatballs. A serving is 2 Meatballs. Serves 8

Sounds amazing and not very many ingredients! How did it turn out?0

They were SO delicious! The sauce is so good that I think I will double it next time. I served them with zucchini ribbons and a big salad, but you could put them atop rice or couscous or pasta!0
