Curry Meatballs - Paleo Friendly

Preheat Oven to 400 degrees

1 1/2 pound 93/7 Lean Ground, Grass Fed Beef
1/2 cup chopped purple onion
1 organic egg
1 T Curry Powder (red curry if you can find it)
1/2 t Sea Salt

In a large bowl, mix all ingredients together with hands until blended. Shape into 16 meatballs, Spray baking dish with coconut oil, place meatballs in dish, and bake uncovered for 25-30 minutes.

Curry Sauce for Meatballs

1 T Coconut Oil
1 t garlic (fresh)
1 T Curry Powder
2 T Organic Tomato Paste
1/2 cup low sodium Chicken Broth

In a large skillet, saute the garlic in the coconut oil for 2-3 minutes over medium heat. Add curry and tomato paste and whisk together, Add broth and continue to whisk until the sauce is smooth. Bring to a simmer. After the meatballs come out of the oven, add them to the sauce in the skillet and coat well. Cover and let simmer an additional 5 - 10 minutes.

Makes 16 Meatballs. A serving is 2 Meatballs. Serves 8

    They were SO delicious! The sauce is so good that I think I will double it next time. I served them with zucchini ribbons and a big salad, but you could put them atop rice or couscous or pasta!

    YUM. I'm gonna try these. I'm always bored by my old beaten up recipes, and dying for something new for dinner!!
