ok.. here goes. cook 1 onion in olive oil.
Then, add 1 box veg stock (I used wolfgang puck) and about 1/2 box of water.
Add 2 head cauliflower (cut up) one potato (w/skin on).
Cook until veggies are soft.
Puree in blender (in batches) until smooth.
so easy and so filling and sooo good.
If you have extra calories and sodium .. add cheddar cheese on top before serving!0 -
You know, I just finished a very satisfying and delicious lunch, so I shall share!
A lightly toasted blueberry bagel with fat free cream cheese and a few slices of deli honey ham. Made into a bagel-sandwich. (See my diary for nutritional info, it was very healthy and filling.)
The sweetness of the blueberries and the tang of the cream cheese, combined with the saltiness of the honey ham was amazingly delicious. Hit all the taste cravings in one bite. And super easy to make. I might have another one later today, LOL.0
