Bab's Oatmeal Cranberry Choco Chip Cookies

Not as chewy as your traditional oatmeal cookie, but certainly a great low sugar/low sodium alternative. Makes 35 cookies if using a small dasher. One serving = 1 cookie
Ingredients
1. 2 sticks unsalted butter
2. 1 c splenda
3. 1/2 c packed brown sugar
4. 2 large eggs
5. 2 tsp vanilla extract
6. 1 c unbleached all purpose flour
7. 1/2 c whole wheat flour
8. 1 tsp aluminum free baking powder
9. 1 tsp ground cinnamon
10. 1/3 tsp salt
11. 3 c dry oatmeal
12. 1 c dried cranberries
13. 1 c chocolate chips
14. 1 c chopped walnuts
15. 2 tbsp whole flax seeds
Directions
Preheat oven to 350*
1. Cream softened butter, sugars together
2. Add eggs and vanilla and beat until smooth
3. Sift together all dry ingredients and slowly add to the wet
4. Turn mixer to low and add in oatmeal, flax seeds, cranberries, nuts and chocolate chips
5. Mix until combined
6. Using a small dasher drop cookies onto ungreased cookie sheets
7. Bake 12-14 minutes
8. Rotate pans half way thru baking process and using a spatula pat down the cookies
9. Remove from pans to cooling racks
10. When completely cool, store in a container with a piece of bread which will keep the cookies fresh and moist. (Baker's Tip)
